I recently whined about missing an unexpected
parcel delivery, and how it was going to eat away at me all day wondering what
it was…while silently praying to the Vodka Gods that it would be a bubble
wrapped George Clooney brandishing a Nespresso.
Alas, it was not.
Despite being bitterly disappointed at George’s no-show, I was buoyed by the contents of the box:

I love me some goodies, especially when they’re
unexpected.
The lovely Kellie from Impact Communications sent this surprise
parcel of Pyrex cooking goodies for me to do my worst, or rather, best.
And so I figured it was time to put up or shut up on the
vege bragging front.
I regularly bang on about how I am known throughout all the
land (or at least my own family) for the amount of vegetables I include in any
given dish.
And so, thanks to my new Pyrex goodies, I present to you
my Chicken and 10 Veg pie of awesome that totally compensates for a whole week's takeaway 2 minute noodles tinned spaghetti parentally irresponsible meals. I'm working on reducing the length of the name.
Please, please, keep the oohing and aahing to a dull roar.
Now there’s a lot of ingredients, but it’s so
full of vege goodness that it’s worth the 30mins prep time.
Here’s what you need:
- 2 bottles of white wine (duh..)
- 600g chicken, cubed (I prefer thigh for taste, but breast is
also fine)
- Olive oil and butter for cooking (don’t be scared…butter’s
good for you now, haven’t you heard?)
- 4 sheets puff pastry
- 4 teaspoons crushed garlic
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 packet Continental Creamy Chicken soup mix
- 1 of every veg you can get your hands on

Now is when you crack open the first bottle of wine, as you look at all those
ingredients you’re going to have to prepare….
I had totally typed up a mega huge blog post of every freaking step, but it's not rocket science.
So you cook all the veg.
Then you lightly brown the chicken - in 2 batches if you are not blessed with an enormous pan (not a metaphor).
Then you mix it all together and add the chicken soup mix, and low and behold - you have a savoury pie filling.
Whack it all in a Pyrex Easy Grab Casserole Dish and smugly admire your vege-filled work. Mother of the year. Right here.
Slap the pastry on top, taking out your pent up frustration while stabbing a few air-holes in the top.
Cook that bad boy at 180C (350F) for 30mins. Or, you know, 60mins if you are easily distracted by Twitter and wine. Ahem.

Groundbreaking stuff.
You may note that the 2 bottles of wine are not mentioned in the recipe.
They are your reward and sustenance while preparing such an awesome meal. Go nuts.
But not too nuts. Not until you've finished using the knife. Then knock yourself out (literally, or not).

I love that Pyrex is so durable - even I can't burn/bake forgotten meals into these. Everything washes off.

I make a similar dish to yours. Except I grate all the veg or process them down rather than chopping as I'm lazy. Also I tear up a block of feta cheese through the veggies for some dairy goodness.

1 jar ready made lasagne cheese
1 jar ready made lasagna sauce
500g minced meat
Step one, watch DP cook mince meat and then add the sauce
Step two, tell DP to alternate layers of sauce, cheese and lasagna sheets
Step three, cook until you can smell burned cheese in the air
Step four, claim all the glory. the end.
Ye Olde Worlde Pasta Bake Extraordinaire. The recipe? Buy a jar of Dolmio and follow the instructions.
ReplyDeleteOr, when I'm feeling creative, baked chicken marylands with chorizo and rosemary. Mmmmm, I'm slivating. Think I'll do that tonight.
I love creamy potato bake. Slice an onion and lay on the bottom of the dish. Thinly slice peeled potatoes and lay over onion, you could also add sliced sweet potato alternating between the potato layers. Sprinkle over chicken or vege stock (not too much) and pour over cream. Add a dash of pepper. Top with grated cheese, parmesan, cheddar or mozzarella. Bake for about 50 mins. Delicious :)

ReplyDeleteSweet potato casserole topped with molasses toasted pecan and brown sugar (who says veg can't be dessert?) it's the Alabama in me that loves this dish in winter. It's a family favorite and a bit of soul food to make you smile.

ReplyDelete375 g fresh lasagna sheets
1 x 550 g jar pasta sauce
500 g grated mozzarella cheese
Grated parmesan cheese
2 cups bechamel sauce
2 cups sliced mushrooms
2 cups fresh spinach leaves
3 zucchini, sliced lengthwise
500 g butternut pumpkin, peeled and sliced
1 large sweet potato, peeled and slicedSpray zucchini, pumpkin and sweet potato with oil spray and bake at 180°C for about 20minutes.Place all the vegetables in a bowl and gently stir through a cup of pasta sauce.Spread a little sauce on the base of a lasagna dish and layer with lasagna sheets,vegetables, mozzarella, bechamel sauce and parmesan cheese. Gently press down eachlayer.Spread a final layer of pasta with sauce and sprinkle with parmesan cheese. Cover with foil and bake at 180°C for about 1 hour.
Potato Bake, im like Homer when it comes to this dish *drool... Im yet to find anyone who doesnt love it... I always deliberately make too much so I can eat it for lunch the next day :o)

ReplyDeleteOoooh pyrex! I've only got a jug because admittedly I'm the worst cook ever. BUT I love my pyrex jug, it's withstood 3 years so far of clumsy-ness and failed 'sauces'. The only dish I can cook without ruining? A cheat's sheppards pie. Cooked mince, craploads of veg (makes me feel like mother of the year too!) make gravy in pyrex jug & stir through, top with mashed potato & cheese and bake in oven until cheese is golden.

My husband's lasagne rocks my world (and he uses a good slosh of wine so of course the rest of the bottle can't go to waste) because not only do I not have to cook but it's delicious...except for that time he dropped it and the ceramic (read very breakable) dish it was in.

I do something similar with veggies, beef mince and cream of chicken soup, throw into pyrex dish when cooked, top with mashed potato and grated cheese and heat in oven until cheese melted and starting to brown. Kids love it.

ReplyDeletei use my extra large pyrex casserole dish with lid to cook my microwave risotto - I got this dish for my 21st birthday (I will be celebrating the 13th anniversary of said event this year). I also use my 2ltr pyrex jug to make custard in the microwave.

ReplyDeleteApple pie. You can cook Apple Pie in almost any type of dish, but Pyrex is best. Virtually no washing up required, just add the cream/ice cream on top and eat straight out of the dish!

Following on Facebook, my fave is VEGGIE PASTA BAKE with bacon, it's made with milk and chicken stock (no cream which is kinder to my tush) and has bacon bits and sooooo many yummy veggies (like broccoli, cauli, zuccini and mushies) yet it tastes like Carbonara, it is sooooo good *drools* Actually I'm off to make a bake now (too bad it's too early for a glass of bubbly)...

Oh and some yummy deserts like Apple and Rhubarb crumble and a Lemon Delicious Pudding also cook beautifully in a Pyrex dish, perfect for those winter nights. Hmm now what's for dinner tonight. :)

Maybe I should just give the kids an extra late arvo snack and call him on it next time he offers. I would make an excellent back seat chef, directing and instructing and pointing out *ever so nicely* where he went wrong, heh.
